Pumpkin Cheesecake Cookies
Pumpkin Cheesecake Cookies
Ingredients
- 1 8 oz. cream cheese
- 1/2 cup butter
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1/2 cup graham cracker crumbs
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon cinnamon

- 1/2 cup graham cracker crumbs
- 1/2 teaspoon pumpkin pie spice
Instructions

Preheat oven to 350.

Mix together your room temperature cream cheese, butter and pumpkin until smooth.

Stir in the sugar and vanilla.

Add the flour, 1/2 cup graham cracker crumbs, pumpkin pie spice and cinnamon. Mix until smooth.

Place tablespoon size cookies on parchment paper or greased cookie sheets.

Combine the 1/2 cup graham cracker crumbs and 1/2 teaspoon pumpkin pie spice.

Sprinkle with the graham cracker/pumpkin pie mixture.

Bake for 15 minutes.

Take a spoon and flatten the cookies a little.

Bake for an additional 3-5 minutes.

Remove from cookie sheet, allow to cool, and put them in the fridge.

They are best served chilled.
