I love doing the Recipe Round-Up each month. For the month of January the theme is Cold Weather Comfort Foods. When I think of cold weather one of my favorite foods to fix is chili. You can make it spicy enough that it will warm you from the inside. My favorite lately is Chipotle Chicken Chili. It is delicious! I love chili with chicken instead of hamburger meat. I feel like it is a little healthier and not so greasy. This is just a basic recipe, feel free to add more beans or none at all. Add more or less spices if you want. Even after I added the amounts below I went back and added more spice at the end because it wasn’t quite spicy enough for my liking.
Chipotle Chicken Chili

Ingredients
- 3 Tablespoons Olive Oil
- 1 Whole Onion, Diced
- 4 Cloves Garlic, Minced
- 3 Pounds Boneless Chicken Breasts, Cut Into Large Chunks
- 1 Cup Of Low Sodium Chicken Broth
- 2 Cans Diced Tomatoes
- 1 Can Tomato Sauce
- 3 Cans Of Beans (Pinto, Kidney, Black, Red, etc)
- 2 Tablespoons Chili Powder
- 2 Tablespoons Ground Cumin
- 2 Teaspoons Cayenne Red Pepper
- 2 Teaspoons Salt
- 1/4 Cup Cornmeal
- 1/4 Cup Warm Water
- 1 Lime
Instructions
- Heat the olive oil in a large pot over medium heat then add the garlic and onions. Cook for a few minutes until onions become translucent.
- Add the chicken and cook until lightly browned on the outside. Add 8 ounces of the chicken broth, reserving the rest, then cook for a couple of minutes.
- Add the two cans of tomatoes with the juice, plus the tomato sauce. Drain and rinse the three cans of beans.
- Next add the chili powder, cumin, cayenne red pepper and salt. Adjust the amount you want based on how spicy you like your chili. Stir to combine. Then cover the pot and cook for 1 hour.
- To thicken your chili add the cornmeal and warm water together. Then add the cornmeal/water mixture and lime juice to the chili. If you like your chili more soupy donâ??t do the cornmeal/water mixture.
- Stir and cook for at least 15 more minutes. If you cook longer the chicken will start breaking up. Serve with the toppings of your choice. Enjoy!

- Sour Cream
- Lime Wedges
- Fritos or Tortilla Chips
- Grated Sharp Cheddar Cheese
This Chipotle Chicken Chili would be awesome served as a chili bar where everyone could add their own toppings or eat it how every they want. Served over a baked potato? Sure! Eat inside a Taco Shell? Yumm! Traditional way with some Jalapeno Cornbread? To die for! Perfect for Superbowl Party, Birthday Party, or any other winter get together. Hope you enjoy this recipe.
