Hello Whimsy & Hope readers! I’m excited to be guest posting today for Sarah. I’ve been a fan of hers for a long time as I’m sure many of you have so this is a treat for me. Today I’m sharing a recipe that is one of my favorites and great for busy nights or when you have leftover chicken you need to get rid of. It’s also an easy option when you have people over for lunch.

Ingredients
- 2-3 cups of shredded chicken
- 1/2 small cucumber, diced with seeds removed
- 1 cup grapes, halved
- 1 tbsp each of fresh chives, dill and thyme, finely chopped
- 1 tsp. lemon zest
- 1 tbsp. lemon juice
- 1/2 cup olive oil mayo
- Kaiser or Croissant Rolls
Instructions
- Dice cucumbers and halve the grapes. Place them in a bowl with the chicken along with finely chopped herbs.
- Add only a quarter cup of mayo to start, the lemon zest, lemon juice and salt and pepper to taste.
- Mix well. If you feel it needs more mayo, add the second quarter cup gradually until you find the consistency you prefer.
- Serve on a roll with a side of veggies.
Notes
Use this recipe as a guide. A variety of herbs would make a tasty addition if you don't have the three included available. Chicken can be subbed for leftover turkey as well.
With school in session and the holidays coming, it’s always great to have a recipe on hand that’s easy and uses stuff you already have in your fridge. This recipe is super flexible so don’t be afraid to play around a bit.
