Recipe 11/52 for my 30 before 30 list. I am making and blogging about one new recipe a week. Kenny, his dad, and Dustyn went fishing awhile back and caught some catfish. We had fried some up that night, but froze the rest of it for a later date. I defrosted it and went on a hunt for a healthier way to cook it that would be approved for my Medifast Lean & Green meal. This Cajun Catfish recipe is sooo delicious, easy to make, and healthy.
Cajun Catfish Recipe
Sarah Halstead
Ingredients
- 20 oz raw wild catfish
- 1/2 tsp black pepper
- 1/4 tsp cayenne red pepper
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp lemon pepper
Instructions
- Combine seasonings in a small bowl.
- Sprinkle on both sides of the catfish.
- Heat skillet over medium-high heat.
- Spray skillet with non-stick cooking spray.
- Sear on both sides for a couple minutes.
- Then place in a 9x13 dish and bake at 375 degrees for 8 to 10 minutes or until fish flakes easily.
This recipe is very spicy. If you do not like too much spice put less cayenne pepper or omit it all together. You could also maybe leave out the black pepper since you are using lemon pepper. I served with lemon so you could sprinkle it over the fish.
I will definitely be making this again as soon as Kenny goes fishing and catches more catfish. Though I am sure you could substitute the catfish with another type of fish like tilapia or cod.
