I made this Avocado Black Bean Salsa the other day. I thought I would mix it up and top the new Rosemary Fries from Alexia with it instead of serving with chips. It turned out amazing!
My three favorite products from Alexia right now are the onion rings, rosemary fries, and sweet potato fries! Yumm. I love the high quality that Alexia brings to the table with fries. They are easy to cook and healthier for you. They are made from all natural ingredients, which is a huge bonus for my family. The fries and rings are so versatile. You can see a couple recipes I made back in January with the sweet potato fries and the crinkle cut fries. There are so many ways to serve these products. Next on my list to make is an onion ring topped burger.
I picked up all three flavors from Alexia in the freezer section at my Walmart.
Check out the easy recipe below! This is super simple to make and will please the crowd at your next get together. You can make the salsa up ahead of time. then cook the fries and add the avocado when you are ready to serve.
Avocado Black Bean Salsa

New twist on avocado black bean salsa. Try it over rosemary fries instead of with chips!
Ingredients
- 2 avocados
- 1 can black beans, drained & rinsed
- 1 can yellow corn, drained & rinses
- 1/4 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 2 tomatoes, chopped
- 2 limes
- 2 Tbls. Extra Virgin Olive Oil
Instructions
- In a large bowl mix together the juice from two limes with the olive oil.
- Add the drain and rinsed black beans and corn, tomatoes, red onion, and cilantro to the bowl.
- Mix well and place in the fridge for 30 minutes.
- While this is setting cook the fries according to the directions on the package.
- Fold in the avocado right before adding the salsa to the fries.
- Top with a little extra cilantro.
Notes
You can add more or less of any of the ingredients to customize it to your taste.
